Offcourse there is one slide (slide 51) which tells the admin how to configure postfix and I think any postfix sysadmin will not look at UASG site to look for that configuration. Thats simply available by google search "postfix idn support" and he gets the full smtputf8 config.
Surely this long presentation is excellent (77 slides) for understanding material for people who wishes to understand protocols, responses, even some best practices for email admins to configure dkim, spf, mx etc etc.. which has nothing to do with UASG. Even example in presentation like kévin@exâmple , how admin will be able to get EAI mailbox will remain a question to answer.
However if we know some postfix admin who will get benefit from this doc. I am all for it to publish.

why not? This is one of the objectives of the document.

sure: the tutorial fits exactly that. It uses known EAI-ready open
source « products » (postfix and courier) and then instruct how to
configure them to make them EAI ready. It obviously does not teach them
how to install a mail server, since that could take much more content

well, of course, one may want to read RFCs. But the first section of the
tutorial provides an overview of the key elements the sysadmin needs to
know, without going to the gory details (which they usually don’t
want). Then it discusses practical configuration parameters to setup
Postfix and/or Courier to be EAI ready. So it seems to me on the
contrary that the document do serve the purpose for sysadmin.
