Before we start making a laundry list of values - let's first review existing statements and values mentioned both by users and At-large. Privacy is such a core value - and I support - Danny's proposal that privacy be added as a core value. On the topic of additional values - instead of listing individual rights (such as privacy, gender, etc) we might want instead to focus on having ICANN adopt as a key value - a strong endorsement of the international norms such as the Vienna convention on human rights.
